Build from scratch with stable realeases

Hello,

how can I build from scratch only using stable sources?

The instructions at:
http://gparted.sourceforge.net/create-gparted-live.php

points to a _custom_ "sid" and the uncommon modifications of
the live system are difficult to handle. Especially if one would use the
official way to use pinning and the official apt-sources.

e.g. I would like to install netsurf from the unstable sources,
because I can't read this forum with the stable netsurf 1.2.x release
which is available from the official sources.
But that uncommon modifications are very difficult to handle.

Would be very good if the GParted live system would use
a pinning system which can be used with other sources.
