If you just deleted a partition without overwriting with other content, you can use "testdisk" to scan the disk for partition entries.
Testdisk is included in the GParted livecd (it runs from the command line, in a terminal window).
Furthermore, it comes in its own bootable cd. Do a web search for "testdisk download", to find it.
Anyway, there is no general "undo" function in GParted, because many operations are done directly on the disk content. That's why we insist in the previous backup of any important data before any partitioning operation.

Sorry for the delay. The command is
testdisk
(in old versions it was
Testdisk
with a capital initial T. I don't remember if this is still valid, there are many changes in the livecd since then).
